Turtle-candy is chocolate classic that's surprisingly simple to making at home. You just need three ingredients to recreate the pecans, caramel and chocolate. There are a lot of different ways to make them - some people shape them into patties, while others like to make a more literal turtle shape. Ultimately, how you do them is up to you. The important part and the thing that makes a turtle is the combination of chocolate, pecans and caramel.
* Ingredients :
° 136g Flour (1 cup)
° 43g (1/3 cup) cocoa powder
° 0.25c. coffee Salt
° 8c. soft butter (113 g)
° 133g Sugar (1/3 cup)
° 1Large egg with the white separated from the yolk
° 1White
° 2tbsp. milk
° 1tbsp. teaspoon Vanilla extract
° 125g Pecan mix of pistachio almonds (and cashews, finely chopped)
° 14Soft caramel candies
° 3tbsp. heavy cream
* Preparation steps :
Mix the cocoa and flour in a bowl.
With an electric mixer (medium power), beat the butter and sugar for 2 minutes, until light and fluffy.
Add the egg yolk, milk, vanilla and mix.
Reduce speed, add flour and mix on low speed until combined.
Wrap the dough in cling film and place in the refrigerator for an hour, until a firm dough forms.
Preheat the oven to 180 ° C.
Beat egg whites until frothy.
Place the pecans in another bowl.
Take out the dough, make 2.5 cm balls and dip them in the egg white and then in the pecans.
Arrange the balls on a sheet of baking paper, 5 cm apart.
Make an imprint in the middle of each ball.
Place the baking sheet halfway up and cook for about 12 minutes, turning the baking sheet halfway through.
Dissolve caramel & cream in bowl about 1 to 2 min, stir occasionally, to soft.
After removing the cookies from the oven, gently press again on the impression.
Fill each cookie with 1/2 teaspoon of the caramel mixture.
Let cool for 10 minutes then place on another baking sheet to let cool completely.
