Buckeye ball are fast to made at home with this simply Buckeye recipe. An essential item for any cookie tin!
* Ingredients :
° 1 1/2 c (390 g) smooth peanut butter
° ½ c (115 g/1 stick) melted unsalted butter
° 1 tsp vanilla extract
° 3/4 tsp kosher salt
° 3 1/2 c (400 g) icing sugar
° 3 c (525 g) semisweet chocolate chips
* Methods :
1 Make the peanut butter filling: Put peanut butter, melted butter, vanilla, and salt in a large bowl and stir until combined. Siift 2 c powder sugar to bowl fine mesh strainer also stir to the sugar is absorbed. Sift rest of the powdere sugar and mix to form a smooth, firm dough.
2 Shape the filling into balls: Roll out a small portion of the dough (a teaspoon of biscuits is perfect for this!). Make 1-inch balls by rolling them between your palms.
Place it on a baking sheet lined with butter paper. Repeat to all of peanut butter filling is gone.
3 Place the balls in the refrigerator for at least an hour or overnight in the refrigerator until the balls are firm enough to submerge.
4 Melt Chocolate for Coating: After the peanut butter balls have cooled, place the chocolate chips in a microwave-safe bowl in 30-second increments on high power, stirring between each cooking cycle, until the chocolate is melted and smooth.
5 Dip the peanut butter balls in the melted chocolate: prick one of the peanut butter balls with a toothpick and dip it into the melted chocolate until 3/4 of the ball is covered with chocolate. Leave the top of the ball uncovered so you can see some of the peanut butter. Return to the baking tray and repeat with the remaining balls.
6 Cold Buckeyes: Place in the refrigerator for at least an hour or overnight, until the chocolate has hardened. Time the chocolate is solide, wet your finger & smooth hole made by toothpick with your finger.
Store the box in an airtight container in the refrigerator until you are ready to eat. Buckeyes can be stored in an airtight container in the refrigerator for several weeks or (tightly packed) in the freezer for several months.
