This is a sweet potato pie recipe.
* Ingredients
+Crust
° 1 1/2 cups (375 ml) Five Roses All-Purpose Flour
° 1/2 tsp. (2 ml) salt
° 1/2 cup (125 ml) cold cubed butter
° 1 egg
° 1 c. (5 ml) white vinegar
° Cold water
° 2 eggs
° 1 1/2 cups (375 ml) sweet potatoes, cooked and mashed
° 1 1/4 cups (310 ml) 10% coffee cream or 5% or 6% light cream or milk
° 3/4 cup (180 ml) tightly packed brown sugar
° 1 c. (5 ml) ground cinnamon
° 1 c. (5 ml) ground ginger
° 1 c. (5 ml) salt
° 1/4 tsp. (1 ml) sweet pepper (whole spice)
° 1/4 tsp. (1 ml) ground cloves
° 1/4 tsp. (1 ml) ground nutmeg

In the bowl of a food processor fitted with a metal knife, mix together the butter, flour, and salt. Mix until the mixture becomes granular.
Whisk eggs and vinegar together in a measuring cup; Add cold water to 1/3 cup (80 ml). Pour the mixture into the flour mixture and mix until the dough begins to clump together.
Form a ball of dough and let it cool in the fridge. Spread the dough between two sheets of wax paper. Spread it on the bottom of a 9-inch (23-cm) pie plate; Let it cool for 15 minutes.

Beat eggs in mousse. Add mashed potatoes, cream, brown sugar, salt and spices. Pour over pastries.
Bake at 425°F (220°C) for 15 minutes; Reduce to 350°F (180°C) and cook for an additional 40 minutes or until a toothpick in the center comes out dry.
