Cabbage Roll Soup

 



Ingredients


1Little green cabbage

1Dozen of canned chestnuts (or vacuum packed )

1.5 l Vegetable broth

3Carrots

1Large onion

2 tbsp. tablespoons olive oil

1Sprig of thyme

Salt

Pepper

Calories = Medium


Preparation steps


Peel the carrots and onion. Cut them into slices.


Rinse the cabbage and cut it into pieces.


Heat the olive oil in a pot. Sauté the onion for a few minutes until it begins to brown.


Then add the broth as well as the drained chestnuts, carrots, cabbage, thyme, salt and pepper.


Cover and cook for 50 minutes before serving.

To make this cabbage soup very delicious, serve it with slices of bacon grilled in a pan.
